What is gluten?
Gluten is protein family found in wheat, barley, grains.
Gluten consist of two main protein glutenin and gliadin. In which gliadin is a protein which is responsible for bad effect of gluten.
When you add water to flour it gets sticky. The sticky thing which you see is gluten. It swells & form like a glue which holds the dough together.
As you bake the dough it become bread. It is the protein which make the dough to rise up. It also give the dough softness and chewy nature when baked.
